Chicken Medley

Need a quick and easy dish for dinner? This one-pot dish hits the spot every time! It’s healthy, but packed with flavor! The fresh vegetables are the key. This dish works with any vegetables you choose, and I’ve experimented with several variations, but this is my favorite combination.

Ingredients
  • 4-5 chicken thighs, skinned
  • 1 sweet potato
  • 4 white potatoes
  • 2 cups of green beans
  • 1 cup of mushrooms
  • 1 onion
  • ¼ cup of chicken broth
  • Paprika
  • Pepper
  • Mrs. Dash table blend
Instructions
  1. Cut up veggies and potatoes on a large cutting board and set aside.
  2. Season both sides of chicken with paprika, pepper and Mrs. Dash original seasoning.
  3. In a large pan or wok, brown chicken on medium heat for 5 minutes, turning once.
  4. Add chicken broth, veggies and potatoes to pan. Season with Mr. Dash and bring to a boil.
  5. Cover and simmer on low for 30 minutes, stirring occasionally.

I like to serve this meal with a side of fresh corn and rolls. While chicken dish is cooking, cut kernels from 2-3 fresh corn ears on a cutting board. In a medium saucepan, steam fresh corn for at least 7 minutes in a steaming basket. For quick dinner rolls, cut up hamburger bread buns into fourths and heat in 350-degree oven for 3-5 minutes until warm.
