Easy Stir Fry

My hubby and I loooove stir fry. One night, when we were tempted to go to one of our favorite restaurants, I tried making my own stir-fry dish instead. We had originally bought the tenderloins for a steak dinner, but upon the hubby’s request, we tried them in this dish, and the results were mouth-watering. Hubby ate every bite! And it’s a great way for me to trick him into eating more veggies! Give it a try!

Serves: 2-4
Ingredients
  • 2 tenderloin steaks, sliced lengthwise
  • ½ pound of peeled, raw shrimp
  • 1 cup of fresh corn
  • 1 cup fresh chopped carrots
  • 1 cup fresh green beans
  • ¼ cup of chopped onions
  • 2 bags of instant brown rice
  • Soy sauce (optional)
Instructions
  1. Season steak and shrimp separately, with Mrs. Dash table blend seasoning.
  2. In a small pan, cook shrimp until they turn pink and set aside.
  3. In a large wok or pan of your choice, spray pan with cooking spray, and cook steak and onion on medium-high heat, until steak is browned on all sides, stirring occasionally.
  4. While meat is cooking, steam vegetables for 7-8 minutes and cook rice in microwave.
  5. Once steak is browned, add shrimp to large pan, cover, and simmer on low heat.
  6. When vegetables are done, add to wok with meat. Stir, cover and simmer on low for 5 minutes.
  7. Serve stir fry with rice. Add soy sauce if desired.

I like to serve this meal with biscuits. The ones in the photo are Red Lobster’s cheese and herb biscuits. The mix is available from Costco. Delicious!
